摘要:
真菌毒素是产毒真菌产生的低分子有毒次生代谢产物,具有包括遗传毒性和内分泌干扰在内的一系列毒性作用。对人类和环境的影响主要与其在食品和饲料中的存在有关,特别是在粮食中存在广泛。近年来随着检测技术的发展和相关研究的深入,一些新兴真菌毒素不断被发现。目前检出率较高、污染较为严重的新兴毒素主要包括镰刀菌属、链格孢属和曲霉属等产毒真菌产生的毒素。本文将依据现有的风险调查报告与数据,综述粮食中新兴真菌毒素及污染现状研究进展,旨在为新兴真菌毒素的风险评估提供理论参考。
