摘要:
随着健康食品意识的兴起和社会可持续发展理念的发展,新型原料的开发和相关技术的完善促进了植物基食品行业迅速发展,并在国内外推出多种商业化的产品。同时素食主义人群的增多,也成为了植物基食品行业进一步发展的动力源泉。对于植物基食品的研究,基于我国农业大国的国情、国民的饮食习惯和植物基食品产业发展初期的现状,本文着重研究谷物资源在植物基食品中的应用,对谷物原料在植物基食品中的呈现形式、风味物质和技术手段进行综述,对于谷物资源在植物基食品中的未来研究进行展望。
